Seasonal Turducken (10 lb)

A Louisiana holiday centerpiece, made by hand in limited seasonal batches: boneless chicken and duck, Cajun pork sausage and cornbread dressing, all stuffed into a semi-boneless turkey. Feeds a crowd, about 20 servings.

Thawing Instructions

The turducken must thaw completely before cooking. For best results, leave it in the vacuum-sealed bag and thaw in the refrigerator for about 48 hours.

Cooking Instructions

Remove from the bag. Bake at 325°F, breast side up, on a rack in a roasting pan, covered for 3 hours, then uncovered for 30 minutes, or until the internal temperature reaches 165°F. Let it rest 20 minutes to seal in the juices.

Carving

Remove the netting. Slice off the wings and drumsticks, then cut 1/2-inch slices across and down the center.
